BACON Maple Walnut Ice Cream

BACON MAPLE WALNUT ICE CREAM


 It's official. I've found my new hobby in the kitchen. Ice Cream Makin'... AND NOW.. I need to share my latest recipe for Ice Cream because I think its my new FAVE! 

Generally speaking I don't think MEAT has a place in deserts, but I LOVE pushing boundaries. I grew up eating a Persian Porridge named Haleem, which has turkey in it.  (Recipe coming..) so I do think rules are meant to be .. taken with a grain of salt. Plus, we are going to CANDY our BACON, which REALLY makes a huge difference in the final product. We're also going to roast our Walnuts in butter.

Pitter Patter..

    ACCOUTREMENTS 

      CANDIED BACON: 

  •   1/4 cup Maple Syrup
  •   1/4 cup Brown Sugar (stir until dissolved)
  •   3-4 strips Bacon - I usually end up snacking on one so make an extra ;)  

    LIGHTLY COOK BACON in OVEN @ 330-350°F on a rack w pan (start from cold)

    BRUSH bacon and continue to cook for 20-25 min until nearly BLACK!

    (YES BLACK. At this point it loses it's meaty texture and crystalizes)

    Let candied bacon cool and chop into 1/4" pieces. 

    Save the sugar-fat drippings.

        BUTTER ROASTED WALNUTS

  •   1/2 cup Raw Walnut Pieces
  •   1/4 cup Unsalted Butter
     Roast in oven for 3 min @ 330-350°F 
           
    Drain & separate walnuts from butter.
 

    MAPLE GLACE CUSTARD

  •  3 Egg Yolks
  •  1/2 cup sugar
  •  1/2 cup Maple Syrup
  •  1/3 cup sugar dripping mixture (cooled)
    In a LARGE BOWL, mix until smooth
  • 2 cups Milk
  • 2 cups Heavy Cream
  • 2 oz Bourbon, Whiskey or Dark Rum (optional)
    On medium heat, stir continuously @ 155-165°F for 15-20 min
    Add to Egg Mixture 1/2 cup at a time (tempering) then reintroduce to heat 
    Continue to stir continuously @ 155-165°F for 5-10 min
    Pour mixture into large mason jar or container

Let cool to 100-115°F then put in at lowest rack in refrigerator 3-4 hours.
Put in freezer 1 hour prior to adding to Ice Cream Maker.
Churn in Ice Cream Maker for 20 min adding accoutrements after 10 min (save some for garnish). 
Place in container and freeze for 4 hour or overnight.

Scoop and serve.
