Quick tacos are my fav lately, cuz I have had a busy start to the year.
Here's the recipe:
Take 1x Poblano and/or a Jalapeño remove the stem, seeds and white/perth
Cut 2" brick of Monterey Cheese into small pieces
Stuff it w cheese
Get your pan hot AF
Place your stuffed peppers on 2-3 min per side until browned or charred
Remove from heat
Chop it all up
Add any meat, beans or fixins you like...
Add it back to your pan, on medium low
Cook the cheese a little until queso melty
Divi it up, add your tortillas
Let it steam for a minute then remove from heat using a spatula
Plate and add your fixins
I like lime, avacado, and cilantro paste
Serve and enjoy
